Apple Kugel

We make this year-round, always gluten-free. It's really good!


Prep time - how quickly can you grate apples?


2 lbs. baking apples, peeled and grated

5 Eggs

3 Tablespoons potato starch

¼ cup oil (not olive oil)

½ lemon (juice and rind)

½ Cup Sugar

Cinnamon to taste

½ teaspoon salt


Procedure

Grate peeled apples coarsely

Place sugar, cinnamon, lemon rind, juice, and oil over apples. Mix to blend

Beat eggs well, add salt and potato starch. Add to apple mixture.

Bake in a greased 8x8 or 9x9 pan at 350 for 30-45 minutes

NOTES

Make sure the apples you use are baking apples like Granny Smith, Cortland, or Braeburn, or this will not hold together.
