My sister always makes these for her kids - they're quick and taste delicious. I've been trying to make them GF but they don't come out quite right. They did inspire a different recipe which I'll be sharing.
Prep time - 3 minutes?
3 Eggs
¼ cup milk
¼ teaspoon salt
Matza meal
½ lb. Cottage cheese
Dash of cinnamon
Oil for frying
Procedure
Beat eggs, add milk, and mix in cheese, salt, and cinnamon
Add enough matza meal to make a batter that will drop from a spoon
Fridge 2 hours to thicken, use immediately for thinner pancakes
Fry in hot oil
